Feast for two

I haven't been cooking in a while but last night, I decided to try my hand at dinner with Mr Tay. We each pulled in about 10dollars each and managed to get a pretty great menu of potato salad, baked scallops, truffle salted broccoli and pan fried salmon. While the potato salad and baked scallops still needs work, I'm proud of say that the salmon was pretty damn good and so easy to cook! Followed Jamie Oliver's recipe and cooking method and I got a juicy slab of Salmon that was still nice and pink (I hate overcooked and dry Salmon), flavourful and with an ultra crispy skin. Imagine it'd be amazing with a side serving of truffle salt pasta as well.

I've been really inspired to cook since picking up a Jamie Oliver cookbook at the library sale (for $2!!!!!) so my house is open to any friends who wants to come and be my guinea pig! My new challenge for myself is to try a new recipe every week so by February next year I'll be a supercook ;)

I r cooking mama

Because my helper is still in the Philippines, we don't have anyone to cook, wash or clean for us. While my super mom has taken on the roles of cleaning and washing our clothes, she can't possibly help us cook our meals simply because she's working. The other option is of course buying food but I'm just really sick and tired of the food around my area and nobody really wants to take a walk outside with the current blistering weather, so I've taken on the role of cooking mama to cook for me and my brothers + the extra boyfriend. Admittedly, I'm not a very good cook so I decided to stick to simple recipes like these,

Devilled Eggs
(which imo turned out really really good!!!)

French Bean Salad

Honey baked ham
(I literally cut ham, drizzled honey on top and baked it hahahhaha)

& Truffle Salt Pasta - my self-proclaimed signature dish
Viola a simple meal which fed 3 hungry boys. Love cooking for them because they eat soooo much and wipe the plates clean hahaha I just love it when people finish eating my food because it breaks my heart to throw food away. Anyway the picky eaters gave me a thumbs up so yessaaaaa success!!!!

Rounded up with dessert of Mango Cheesecake with an extra thick crust because we looooove crust.
Made two whole pans of this but they were completely wiped out by the next day hehehe my younger brother really really liked this and it's ridiculously easy to make! I'm hoping to attempt another one this weekend - Lychee Cheesecake!

+ Rose tea

Going to whip up some meatball spaghetti and popcorn chicken today for my boys + Fiona, will let you know how things go ^_^
